VEGETABLE QUICHE 
1 onion, thinly sliced or minced
1 clove garlic, minced
4 c. veggies - broccoli & carrots, cauliflower
Eggs, beaten
1/2 tsp. salt
2 c. Cheddar cheese (or 1 c. Swiss & 1 c. Cheddar cheese)
1/2 tsp. cumin
1/2 tsp. basil
1/2 tsp. marjoram

Steam vegetables to desired tenderness. Fold in eggs, cheese, salt and herbs. Pour into 8 inch square oiled baking dish. Bake at 325 degrees for 30-40 minutes.
