VEGETABLE QUICHE 
1 9" baked pie crust
1 sm. chopped onion
1 tbsp. butter
1/2 tsp. garlic powder
4 eggs
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
1 (10 oz.) box frozen mixed vegetables
1 c. Cheddar cheese, shredded
1 1/2 c. cooked, chopped broccoli
Chopped mushrooms

In saucepan, saute onions in butter. Sprinkle with garlic. In bowl, beat eggs until frothy. Stir in onions, cheese, salt, pepper, oregano, vegetables, broccoli and mushrooms. Pour into pie crust. Bake at 350 degrees for 40-45 minutes. Let stand 10 minutes before serving.
