CHEESE - N - SAUSAGE LOAF 
1 1/2 lbs. bulk pork sausage
2 slightly beaten eggs
1/4 lb. sharp process American cheese, cut into 1/4 inch cubes (about 1 c.)
3/4 c. fine cracker crumbs
1/3 c. milk
1/4 c. chopped onions

Thoroughly mix all ingredients to mold. Press into 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan, then turn out into shallow baking dish. Bake in moderate oven (350 degrees) 1 1/4 to 1 1/2 hours. For trim, cut 2 square cheese slices in half diagonally; overlap on the hot loaf - cheese will melt slightly.
