HOT HAM AND APPLE SLAW 
1/3 c. apple juice
1 tbsp. vinegar
2 tsp. cornstarch
1/2 tsp. celery seed
1/8 tsp. pepper
Nonstick spray coating
1/2 c. chopped onion
4 c. coarsely shredded cabbage
1 c. shredded carrots
1 tsp. cooking oil (optional)
8 oz. fully cooked ham, cubed
1 med. apple, coarsely chopped
1 tbsp. sugar

For sauce, stir together, apple juice, vinegar, cornstarch, celery seed, pepper and sugar. Set aside spray a wok or large skillet with nonstick spray coating. Preheat over medium high heat. Add onion and stir fry for 2 minutes. Add cabbage and carrots; stir fry about 3 to 5 minutes until vegetables are tender crisp. Remove from wok. Add oil to hot wok if necessary. Add ham and stir fry 2 to 3 minutes or until heated through. Push ham from center of wok. Stir sauce; add to center of wok. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Return vegetables to wok. Add apple. Stir ingredients together to coat with sauce. Cook and stir 1 minute. Garnish with additional apple slices, if desired. Makes 6 servings.
