BAKED SPICED CHUCK ROAST 
4 lbs. beef chuck
1 tbsp. ginger
1 tbsp. vinegar
1 or 2 onions, chopped
1 tsp. salt
1 tbsp. cinnamon
2 tbsp. sugar
2 c. tomatoes
1 or 2 bay leaves
Little pepper

Brown the meat on all sides to seal in juices. Combine other ingredients and pour over the meat. Cover and cook slowly in moderate oven until tender, about three hours.
