PAN DE ELOTE 
1 (16 oz.) can cream-style corn
1 c. biscuit mix
1 egg beaten
2 tbsp. melted butter
2 tbsp. sugar (optional)
1/2 c. milk
1 (4 oz.) can chopped green chiles
1/2 lb. Jack cheese, sliced thin

Combine corn, biscuit mix, egg, butter, sugar and milk. Mix well. Turn 1/2 the batter into a well greased 8 inch square baking pan. Cover with chiles, then cheese slices. Spread remaining batter over cheese. Bake at 400 degrees for 35 minutes or until browned. 6 servings.
