COSTOLETTE DE POLLO 
3 whole chicken breasts (raw)
Salt
1/2 tsp. white pepper
6 tbsp. flour
4 tbsp. flour
1 c. milk
6 tbsp. grated Parmesan cheese
6 tbsp. grated Swiss cheese

Cut breasts in half. Place between two sheets of waxed paper and pound very thinly. Rub with a mixture of the salt, pepper and 2 tablespoons of flour. Melt 3 tablespoons butter in a skillet, brown chicken in it and transfer to a shallow baking pan. Melt 3 tablespoons butter in a saucepan; blend in the remaining flour. Gradually add the milk, stirring steadily to a boiling point. Cook over low heat for 5 minutes. Mix in cheese until melted. Spread over chicken. Bake in 375 degree oven for 10 minutes or until brown.
