CHICKEN BOG 
1 chicken
1 onion
Bay leaf
Carrots, diced
Rice
Kielbasa or Polish sausage (1 lb.)
Salt and pepper to taste

In a large kettle cook chicken, onion, carrots, bay leaf if desired in boiling water until chicken is done. Some like to cook the kielbasa along with the chicken, but I prefer to boil the sausage separately. Remove chicken from bone and add rice, about 2 cups depending on how much broth is in your kettle. Put chicken and diced up kielbasa back into pot and cook until all water is absorbed. Add salt and pepper. This recipe is very popular in the "south".
