BLUEBERRY QUICK BREAD | |
2 1/2 c. flour 3/4 c. sugar 1 tbsp. baking powder 1/2 tsp. salt 6 tbsp. butter 2 eggs 1 c. milk 1 tsp. vanilla 1 1/2 c. blueberries Mix dry ingredients. Cut in butter. In a small bowl, beat eggs and stir in milk and vanilla. Add to above mixture until flour is just moistened. Gently fold in blueberries. Bake in 9 x 5 inch pan at 350 degrees for 1 hour and 20 minutes. Cool 10 minutes. Remove from pan. Refrigerate leftover bread. |
