BLUEBERRY QUICK BREAD | |
3 c. berries 5 c. flour 1 1/2 c. sugar 2 tbsp. baking powder 1 tsp. salt 3/4 c. butter 4 eggs 2 c. milk 2 tsp. vanilla Preheat oven to 350 degrees. Grease and flour loaf pans (2). In a large bowl, mix flour, sugar and baking powder. Cut butter into flour mixture with a pie cutter. In another bowl, beat eggs slightly; then add milk and vanilla until mixed well. Stir egg mixture into flour mixture until moistened. Gently fold in blueberries. Bake 1 hour and 20 minutes, or until toothpick is clean. Cool in pan or on rack 10 minutes. Makes 2 loaves. |
