MAMA'S MACARONI AND CHEESE 
1/2 lb. macaroni
1 c. grated cheese (I use extra sharp)
3 tbsp. butter
1 tsp. salt
1/8 tsp. cayenne pepper (optional)
1 egg
1/2 c. butter bread crumbs if you wish

Break and boil macaroni in salt water until tender, about 20 minutes. Blanch this in cold water to prevent sticking, drain off excess water. Cover bottom of a baking dish with a layer of macaroni, sprinkle cheese over this, little butter, little salt and pepper.

Continue to do this until all macaroni is used and the cheese is on the top. Mix milk and egg together, pour over the dish. Cover top with bread crumbs if you desire. Bake in moderate oven long enough to brown top and cook egg and milk. Serve in same dish.
