PUMPKIN PIE FILLING 
1 1/2 cups cooked pumpkin
1 cup evaporated milk
1/2 cup white sugar
3/4 cup brown sugar
1 tbsp. molasses
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
2 eggs, slightly beaten
1/2 cup date flakes or bits
1 (9-inch) unbaked pie shell

Combine ingredients; add date flakes or bits. Pour into 9-inch unbaked pastry shell. Bake at 425°F for about 45 minutes. Serve with whipped cream if desired.
