ZUCCHINI OATMEAL BREAD 
1 c. sugar
2 c. zucchini, grated
1 c. oil
3 eggs
1 tsp. vanilla
1/2 c. nuts, chopped
1 c. quick oats
2 c. flour
1 tsp. salt
1/4 tsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1/2 c. raisins, optional

Beat eggs until light and foamy. Add oil, sugar, grated zucchini and vanilla. Mix lightly. Sift together flour, salt, soda, baking powder and cinnamon. Add with oatmeal to egg mixture and mix until blended. Add nuts and raisins. Blend. Bake at 325 degrees for 1 hour. Makes 2 small loaves 8 x 4 inches. (May substitute 1 scant cup whole wheat flour for 1 cup flour.)
