SQUASH CASSEROLE 
2 c. cooked squash mashed (boil 5 minutes)
1 c. chopped onion
2 c. cracker crumbs
1 tsp. salt
2 eggs
3/4 stick butter
1/2 tsp. pepper
1 1/2 c. shredded cheddar cheese
1 c. evaporated milk

Mix all ingredients well. Bake in casserole dish for 40 minutes at 375 degrees.
