CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. salt
1 tsp. nutmeg
2 tsp. cinnamon
2 tsp. baking powder
2 tsp. baking soda
4 eggs
1 1/2 c. vegetable oil
3 c. grated carrots
1 c. chopped nuts

Mix dry ingredients, add eggs and oil. Fold in carrots and nuts. Grease and flour pan. Bake at 325 degrees for 45 minutes or until done (sometimes up to 1 1/2 hours). Cool cake entirely before frosting.

CREAM CHEESE FROSTING:

1/2 c. butter
8 oz. cream cheese, softened
16 oz. box confectionery sugar
2 tsp. vanilla
