HUMMINGBIRD CAKE 
3 c. cake flour
2 c. sugar
4 eggs
1 1/2 c. Wesson oil
1 tsp. baking soda
1 tsp. salt
1 c. chopped nuts
1 c. raisins
4 bananas (2 c.)
1 (8 1/2 oz.) crushed pineapple, undrained
1 tsp. vanilla

Cream sugar and oil. Add eggs, one at a time, beating after each. Add dry mixture to cream mixture. Dice or mash bananas and pineapple. Stir in other ingredients (nuts and raisins). Stir well with spoon. Bake at 350 degrees for 1 hour and 15 minutes to 1 hour and 30 minutes.

Ice with 8 oz. cream cheese, 1 stick butter, 1 box confectioners' sugar and 1 teaspoon vanilla mixed together, after cake has cooled.
