ZUCCHINI DROPS 
1 c. butter
1 c. brown sugar
1 egg
1 1/2 tsp. vanilla
1 c. grated zucchinie
2 to 2 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
Pinch of salt
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
1 c. coconut
1 c. walnuts

Beat butter, brown sugar, egg and vanilla. Stir in zucchini. Add 2 cups flour and spices. Beat until blended. Add additional flour if necessary. Stir in walnuts, coconuts. Drop by teaspoonsful 2 inches apart on ungreased cookie sheet. Oven 350 degrees. Bake 10 to 12 minutes.
