EGGPLANT CASSEROLE 
1 eggplant, peeled, cubed & drained
1 c. sweet milk
1 c. grated sharp cheese
2 beaten eggs
1 tbsp. melted butter
Salt & pepper to taste

Combine all ingredients well. Pour into greased casserole and bake 40 minutes in a 350 degree oven. 4 servings.
