CHEESE AND ONION POTATO
CASSEROLE
 
4 - 6 med. potatoes
1/2 c. butter
8 oz. cheddar cheese, grated
2 c. sour cream
1/3 c. green onion, scallions or fresh chives, chopped
1 tsp. salt
1/2 tsp. pepper
2 extra pats butter for topping

Boil potatoes until soft, not too soft and not too completely done. Set aside to cool. Grate potatoes into a casserole dish. Add 1/4 cup melted butter. Fold in grated cheese and sour cream. (If making the day before, put in refrigerator with cover on and leave sour cream out until ready to bake.) Add onions, salt and pepper. Put pats of butter on top and sprinkle with paprika. Bake, uncovered, at 350 degrees for 1 hour.
