CHARCOAL-BROILED CHICKEN
MARINATED IN PEPPER, OIL AND
LEMON
 
1 broiling chicken
1/3 c. lemon juice
1 tbsp. crushed peppercorns
3 tbsp. olive oil
1 tsp. salt

Take skin off chicken. Put in bowl. Pour over lemon juice, add pepper and olive oil. Marinate at least 2 hours (can refrigerated overnight). Baste from time to time. When ready to grill sprinkle with salt. Turn over on grill every 10 minutes. After about 35 minutes should be done. If chicken dries out - baste with a little olive oil.
