MINTED GREEN PEA SALAD 
1 pkg. (10 oz.) frozen green peas
3 tbsp. mayonnaise
1 tsp. lemon juice
1/2 tsp. sugar
1/4 tsp. dried or 1 tsp. chopped fresh mint, or to taste
1/8 tsp. salt
1/2 c. chopped celery
8 leaves Boston lettuce
Lemon slices and mint leaves for garnish (optional)

Thaw peas in colander under running hot water; set aside to drain. In large bowl, blend mayonnaise, lemon juice, sugar, mint and salt. Stir in celery and peas. Spoon onto lettuce lined platter. Garnish with lemon and mint. Chill before serving. Makes 4 servings.
