FROZEN ROAST 
3-6 lb. roast beef, frozen

Salt and pepper. Put in open pan. Bake at 375 degrees for 1 hour. Turn off oven. Leave door closed. One hour before dinner start oven at 375 degrees. Cook 45 minutes. Medium rare.

WOW! Worked perfectly on my 2-3 lb roast, with one tweak. My Joy of Cooking standard roast recipe preheats oven to 550°F, which I started at (not 375°F). Once roast is placed in oven (I used a v-shaped rack), turn temp down to 375 and cook for the hour. I then followed the remainder of the instructions above and the roast was perfectly medium rare with a nice, thin toasty crust. (I put foil tent over roast because it had no fat on it at all.)

Forgot to take out meat last night so tried this with a 2 lb. sirloin tip roast. My oven only goes to 500°F so preheated to that, then put in seasoned, frozen very hard, roast and turned down to 375°F. Started this at 10:00 and by noon our roast was done perfectly.

I preheated the oven to 550°F reduced temp to 375°F and convection roasted for 45 minutes. The roast was allowed to rest in the oven till we were ready to eat. Perfect - medium rare - no additional cooking time was needed. Supper simple, excellent results, crowd pleaser. Thank you!
