RASPBERRY-SPINACH SALAD 
DRESSING:

2 tbsp. raspberry vinegar
2 tbsp. raspberry jam (melt)
1/3 c. grape seed oil or Smuckers light oil

For dressing, mix vinegar and jam together. Add oil lightly. Toss with spinach, almonds, Kiwi and red raspberries.

SALAD:

Spinach
Almonds
Kiwi
Red raspberries, frozen or fresh

For crisper spinach, rinse well with water, drain and blot, and then chill in bowl for 2 to 3 hours before tossing.
