CHICKEN ROLL UPS FOR TWO | |
5 oz. can of biscuits 10 oz. pkg. of frozen broccoli spears, cooked and drained 1 1/4 c. finely chopped, cooked chicken 1 tbsp. butter 1 tbsp. flour 1/4 to 1/2 tsp. grated lemon peel 1/8 tsp. pepper 3/4 c. milk 2 oz. (1/2 c.) shredded Monterey Jack cheese Heat oven to 375 degrees. Separate dough into 5 biscuits. On large ungreased cookie sheet, press each biscuit to a 5 inch square. Cut broccoli into 10 spears. Arrange 2 spears diagonally across each biscuit; top with 1/4 cup chicken. Fold opposite corners of biscuit square up over broccoli and chicken; pinch well to seal. Bake at 375 degrees for 12 to 15 minutes or until golden brown. In small saucepan, melt butter. Stir in flour, lemon peel, and pepper. Cook until mixture thickens, stirring constantly. Serve roll ups with sauce. |
