PECAN TOPPED SWEET POTATOES 
2 1/2 - 3 lbs. sweet potatoes or yams
2 eggs
3/4 c. brown sugar
1/2 c. melted butter
1 tsp. salt
1 tsp. cinnamon
1 c. pecan halves
Miniature marshmallows
Orange juice, up to 1 c.

Cook and peel sweet potatoes, then mash (about 6 cups). Beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon. Beat in orange juice until moist and fluffy. (Refrigerate if you wish.) Before baking, arrange a layer of marshmallows and over that a layer of pecan halves for the top. Sprinkle with remaining 1/2 cup brown sugar and drizzle with remaining 1/4 cup melted butter. Bake, uncovered in 375 degree oven for 20 minutes or until heated through. Serves 8 to 10. Delicious.
