POLYNESIAN RICE SALAD 
1 c. long grain rice
1/2 c. vegetable oil
1/4 c. cider vinegar
1/4 tsp. salt
3 tbsp. soy sauce
1 c. thinly sliced celery
1/2 c. green onion tops
1 can water chestnuts
2 c. fresh mushrooms
1 (11 oz.) can mandarin oranges
Lettuce

Cook rice according to package directions. Cool. Combine oil, vinegar, soy sauce, salt, celery and onion tops. Stir in rice. Fold in water chestnuts, mushrooms and oranges. Chill. Serve on lettuce. Makes 8 servings.
