LAYERED BEEF CASSEROLE 
3/4 lb. lean ground beef
1/2 c. chopped green pepper
1/2 c. diced celery
1 clove garlic, minced
1 can (15 oz.) tomato sauce
1 c. water
3/4 tsp. Italian seasoning
1/8 tsp. pepper
3/4 tsp. salt, divided
1 egg, slightly beaten
1 c. sm. curd cottage cheese
2 c. cooked brown rice
4 oz. Mozzarella cheese, sliced
1/4 c. grated Parmesan cheese

Make meat sauce, cook beef in 2 quart saucepan. Add green pepper, celery, garlic, tomato sauce, water, Italian seasoning, pepper and salt. Bring to boil. Simmer, uncovered for 30 minutes. Mix egg, remaining 1/4 teaspoon salt and cottage cheese. Put 1/2 rice in 2 quart casserole. Cover with cheese mix. Add 1/2 meat sauce, 1/2 Mozzarella. Repeat rice, meat sauce and Mozzarella layers. Sprinkle with Parmesan. Bake at 350 degres for 30 to 35 minutes until bubbly and golden brown.
