TEX-MEX SKILLET 
1 c. onion
2 tbsp. oil
1/2 c. uncooked rice
1 can chili beans
1 c. tomato juice
1/2 lb. sliced hot dogs
8 oz. cheese
Taco chips

Saute onion in oil. Stir in rice, beans, tomato juice and hot dogs. Cover and cook over low heat 20 to 25 minutes or until rice is tender. Top with cheese and taco chips.
