TEX-MEX LAYER DIP 
1 (10 1/2 oz.) can bean dip or refried beans
2 avocados
2 tbsp. lime juice
Salt and pepper to taste
1 c. sour cream
1 packet taco seasoning mix
1 bunch scallions, chopped
1 (6 oz.) can pitted black olives, chopped
2 tomatoes, chopped
1/2 lb. Monterey Jack cheese, shredded
Tortilla chips

Spread bean dip in the bottom of a glass serving bowl. With a fork, mash the avocados with the lime juice and salt and pepper. Layer on top of the beans.

In a bowl combine the sour cream and seasoning packet. Layer on top of the avocado. Can be made in advance up to this point.

To assemble: Layer the scallions, then olives, then tomatoes, ending with the cheese. Serve with tortilla chips.
