MOM'S ICEBOX COOKIES 
1 c. shortening
1/2 c. white sugar
1/2 c. brown sugar
1 egg, beaten
1/2 tsp. vanilla
2-2 1/2 c. flour
1/4 tsp. baking soda
1/4 tsp. salt
1 c. coconut

Cream shortening, sugars, egg and vanilla. Mix flour, soda and salt; add to creamed mixture. Beat well. Add coconut; shape into rolls and refrigerate several hours. Cut slices. Put on cookie sheet. Bake at 350 degrees until lightly browned.
