OATMEAL ICEBOX COOKIES 
2 c. shortening
2 c. brown sugar
2 c. white sugar
5 c. quick oats
3 c. flour
2 tsp. baking soda
2 tsp. salt
4 eggs
4 tsp. vanilla
1/2 c. nuts or 1 c. raisins (optional)

Cream sugar and shortening. Add eggs one at a time and beat. Add flour, salt and soda, sifted together. Add oats (nuts and raisins) and vanilla. Roll in waxed paper. Keep in refrigerator overnight or until thoroughly chilled. Slice in 1/4 inch slices and bake on ungreased cookie sheet. Makes about 10 dozen. Bake at 375 degrees for 15 minutes in a heavy pan. 12 minutes for a thin pan.
