CHICKEN WITH ORANGES | |
2 chicken breast (split into 4 halves) 1 (16 oz.) can mandarin oranges 1 tsp. powdered ginger 1 c. chicken broth 1 1/2 inch of butter 1 tbsp. cooking oil 1 sm. onion, chopped 1/4 c. orange liqueur or sherry Heat cooking oil and butter in a skillet. Cook chicken breast until brown. Remove chicken from skillet and place in a covered dish. Add chopped onion to renderings in skillet and saute until tender or clear. Drain mandarin oranges and add slices to the onion in the skillet and continue to saute. Add 1 teaspoon of ginger powder and stir. Add 1/4 cup of orange liqueur and let simmer 2-3 minutes. Add 1 cup of chicken broth and stir all ingredients together. Now add the chicken breast and cook on low heat 10-15 minutes, covered. Before serving, uncover dish and let simmer to desired thickness. Serve with noodles. |
