SPANISH RICE 
1/2 c. raw rice
1 c. cheese, cubed
1 c. hot water
1 tsp. salt
1 tbsp. green pepper
2 tbsp. onion, chopped
3 c. tomatoes, cooked
dash of cayenne (hot pepper)

Combine ingredients and pour into 1 1/2-quart casserole dish, greased. Bake at 350°F for about 1 hour. Stir several times during baking.
