SAUSALITO SHRIMP WITH FETTUCCINE | |
2 tbsp. butter 1 - 1 1/2 lbs. Market Day shrimp scampi 1 lb. fresh mushrooms, sliced thin 1 sm. onion, chopped 1 can artichoke hearts, quartered Cooked spinach fettucini, drained 1/2 c. half and half 1/4 c. freshly grated Parmesan cheese Pepper to taste 1. In a heavy skillet melt butter until sizzling. 2. Saute mushrooms and onions until tender. Add shrimp scampi and saute until the shrimp is pink, approximately 7 to 8 minutes. 3. Stir in artichoke hearts. Add half and half and Parmesan cheese. 4. Stir in cooked fettucini; toss to combine. Cook over medium heat, stirring occasionally until heated through. (Fettucini can be served under shrimp mixture if desired.) |
