PEARL ONIONS & PEAS IN MUSTARD
SAUCE
 
4 lbs. white onions, peeled (can use pearl onions in jar)
1/2 c. butter
1/2 c. flour
3 c. heavy cream
1 1/2 tsp. salt, (or less)
1/4 tsp. white pepper
3 tbsp. white vinegar
3 tbsp. lemon juice
1/2 tsp. dry mustard
Pinch of powdered saffron
2 (10 oz.) pkgs. frozen peas

Combine flour, butter, heavy cream, salt, pepper, vinegar, lemon juice, mustard and saffron in a medium saucepan. Whisk until well combined and heat until steaming hot but do not boil. Cook for 10 minutes; add peas and onions and cook until heated through (about 10-15 minutes).

Serve.
