SNACK CAKES 85/CAKE 
1 1/4 c. quick-cooking oatmeal, uncooked
1/2 c. raisins
1/2 c. dates
1/4 c. 100% bran cereal
1/2 c. sliced pineapple, juice packed, undrained
2 sm. apples (2 1/2 inch diameter), peeled, cored, and chopped
1 egg or 1/4 c. egg substitute
2 tbsp. reduced-calorie butter, melted
1 1/2 tsp. baking powder
1 tsp. vanilla
1/4 tsp. salt (optional)

Preheat at 350 degrees. Combine first 4 ingredients in a large bowl, set aside.

Combine remaining ingredients in container of electric blender or food processor; process until smooth. Add pineapple mixture to dry ingredients, stirring to blend well. Spoon batter evenly into a 12-cup muffin pan coated with cooking spray. Bake at 350 degrees for 35 minutes. (Snack cakes do not rise during baking.) Great lowfat energy packed cakes!
