SOMETHING SIMPLE APPLE CAKE 
1/2 c. sugar
2 lg. eggs
8 packets sugar substitute
1 tbsp. cinnamon
1/4 tsp. each baking soda and salt
1/2 tsp. nutmeg
4 med. red apples (Cortland or McIntosh), peeled and cut into chunks (3 c.)
1 tsp. grated lemon peel
2 lg. egg whites, room temp.
1/2 tsp. cream of tartar
1 tbsp. powdered sugar
1/2 c. oil
3 tbsp. apple juice
1 1/2 c. flour
1 tsp. baking powder
1/2 c. walnut meats

Spray 10 3/4 x 7 x 1 1/2 inch pan with non-stick cooking spray.

In large bowl, stir together sugar, oil, eggs, apple juice and sugar substitute until sugar dissolves. Stir in flour, cinnamon, baking powder, baking soda, nutmeg and salt; stir until well blended. Stir in apples, walnuts and lemon peel.

In large bowl beat egg whites and cream of tartar at HIGH speed until stiff; fold into batter. Spoon into prepared pan.

Bake in preheated 350 degree oven 40 to 45 minutes or until toothpick comes out clean. Cool on wire rack. Sift powdered sugar over cake. Makes 12 servings. (245 calories per serving.)
