CARROT PUDDING 
1 stick butter
1/3 c. brown sugar
1 egg
1 tsp. vanilla
1 tsp. lemon juice
1 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
2-3 c. grated carrots

Mix all the ingredients. Bake in buttered pan for 1 hour.
