CHRISTMAS CARROT PUDDING 
1 c. white sugar
1 c. brown sugar
1/3 c. butter
2 eggs
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. flour
1 tsp. salt
1 c. grated raw carrot
1 c. grated raw potato
1 c. dates or raisins
1 c. walnuts

Mix and put in a greased baking dish. Cover tightly with foil. Bake 2 to 3 hours at 325 degrees.

Serve with brandy sauce.

BRANDY SAUCE:

One cup sugar and 1/2 cup butter creamed together. Add 6 tablespoons sweet cream and heat gently and stir constantly, add 4 tablespoons of brandy.
