3-MINUTE MICROWAVE ROCKY ROAD
FUDGE
 
1/2 c. butter
1 lb. powdered sugar
1/3 c. sifted cocoa powder
1/4 c. evaporated milk
1 tsp. vanilla
1 1/2 c. walnuts or pecans
2 c. miniature marshmallows

Place butter in a 2-quart bowl and cook uncovered in microwave oven on high for 1 1/4 minutes or until melted. Stir in sugar, cocoa and milk. Cook on high for 2 minutes or until slightly thinned and warm. Add vanilla and nuts.

Let mixture cool by constantly stirring, just until it is cool enough to add marshmallows and turn the mixture into a wax paper lined 8x8x2 inch pan. Chill until firm.

Turn mixture over onto a cutting board, peel off wax paper and cut into pieces. Yield: 2 pounds of fudge.

Since microwave ovens vary in power, you may need to adjust your cooking time.
