NANCY'S SEVEN LAYER SALAD 
1 head washed, dried and torn iceberg lettuce
1/2 c. chopped green pepper
1/4 c. chopped onion or scallions
1/2 c. chopped celery
1 c. shredded carrots
1 c. frozen peas
4 oz. sharp Cheddar cheese
1 c. mayonnaise
Cooked, chopped bacon

Prepare all ingredients. Layer one by one in large glass salad bowl, pressing to fit all. Cover with mayonnaise, spreading to cover entire bowl. Cover tightly with Saran Wrap. Refrigerate overnight. Omit bacon, if desired. If sweetness preferred, add 3 tablespoons sugar to mayonnaise.
