MOM'S RAISIN FILLED COOKIES | |
DOUGH: 3 c. brown sugar 1 c. shortening 2 eggs 1 c. milk 3 tsp. baking soda 1 tsp. vanilla 6 c. flour or enough to make soft dough FILLING: 8 tbsp. cornstarch 2 c. sugar 4 c. water 1 1/2 boxes raisins In saucepan cook ingredients for filling until thick. Add 1 teaspoon vanilla. Cool. Cream together sugar and shortening. Add eggs, milk and vanilla. Mix in flour to make soft dough. Roll out on floured board to 1/8 inch thickness. Cut with round cookie cutter. Place 1 tablespoon filling on each of half the rounds. Top each with another round. Seal edges with fork. Prick tops of each cookie so steam can escape. Bake on greased cookie sheet at 375 degrees until golden brown. Cool on rack. |
