CARROT CAKE 
Icing:

1 c. sugar
1/2 c. buttermilk
1 tbsp. Karo syrup
1/2 tsp. baking soda

Mix together and pour over hot cake.

Cake:

2 c. sugar
1 1/2 c. oil
4 eggs, beaten
2 c. grated carrots

Stir together the flour and cinnamon. Mix together the sugar, oil, eggs, and carrots. Add to first mixture. Pour into pan sprayed with Pam.

Bake at 350°F for 45-50 minutes.
