CHICKEN KABOBS 
1 chicken breast
8 (1 inch) pepper chunks
1 med. zucchini, cut in 1 inch unpeeled sections
Quick cooking rice
1 tbsp. parsley
1/3 c. stir-fry sauce
8 fresh mushrooms
1 tbsp. butter

Cut chicken into 1 inch chunks. Combine with stir-fry sauce. Cover and chill 15 minutes. Drain, reserve marinade. Alternate chicken and vegetables on 4 skewers. Place on broiler pan and brush with marinade. Broil 4 inches from preheated broiler 5 to 6 minutes. Turn, brush with marinade. Continue broiling 4 to 8 minutes or until chicken is done. Prepare rice. Makes 2 servings.
