GREEN ONION HOECAKES 
1 egg, slightly beaten
1 1/2 c. self-rising cornmeal
1 1/4 c. buttermilk
1 tbsp. vegetable oil
1/4 c. chopped green onions
1/4 c. vegetable oil

Combine first 5 ingredients, mix. Heat 1/4 cup oil (375 degrees) in a large skillet over high heat. For each hoecake pour 1/4 cup batter into skillet. Fry 3 minutes on each side or until browned, adding extra oil as needed. 8 servings.
