COLD ROAST SALAD 
2 c. beef roast, sliced julienne style
3 dill pickles, sliced julienne style
2 green onions, minced
1 1/2 c. onions, minced fine
1 c. potatoes, cooked & cubed
1 can diced beets
2 tbsp. vinegar
3 tbsp. mustard
1 tsp. salt
Dash pepper
1 c. mayonnaise
1 tsp. thyme

Toss together and marinate. Place on lettuce leaves garnish with egg slices, pimento, cucumbers and olives.
