TEX MEX DISH 
3 lg. ripe avocados
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 c. sour cream
1/2 c. mayonnaise
1 pkg. taco seasoning
2 (8 oz.) cans refried beans
1/2 c. scallions
1 can black olives
2 lg. tomatoes

In a mixing bowl, mix above ingredients except avocados, refried beans, cheese, scallions, olives and tomatoes.

Take a 9 x 13 inch baking dish, spread some of the refried beans on bottom, spread mixed ingredients next layer - beans, next layer - mixture, next layer - beans, last layer - mixture.

Smooth mashed avocados across top layer, sprinkle grated cheese across top, sprinkle scallions next, sprinkle sliced olives and lastly add diced tomatoes over top.

This can either be served cold, or hot, and served with tortilla chips. If you bake it, bake at 350 degrees until bubbly. If served cold just refrigerate for 2 hours. Can also be served cold in flour tortillas and heated up in microwave for burritos.

Since microwave ovens vary in power, you may need to adjust your cooking time.
