TEX-MEX SALAD 
1 orange, peeled & diced
1 sm. can mandarin orange slices, drained
5 med. tomatoes, seeded & diced
2 avocados, peeled, pitted & diced
1 can corn kernels, drained
1 sm. green pepper, diced
1 sm. red pepper, diced
1 sm. red onion, minced (opt.)
1 handful of black olive slices (opt.)
1/3 c. olive oil
4 tbsp. fresh lime juice
3 tbsp. mint, minced
Lettuce leaves

1. Combine first 10 ingredients in bowl.

2. Using fork, gradually mix oil into lime juice in small bowl. Season with salt and pepper.

3. Add to salad with mint and mix well.

4. Line plates (or serving bowl) with lettuce leaves. Mound salad on lettuce.
