CRISP POTATO PANCAKES 
6 grated med. potatoes
2 eggs, well beaten
1 1/2 tbsp. flour
1/2 tsp. baking powder
1 tsp. salt
1 sm. onion, grated fine

Peel potatoes and grate fine. Place in bowl and add 2 well-beaten eggs. Combine 1 1/2 tablespoon flour, 1/2 teaspoon baking powder and salt. Add to potato mixture. Drop by spoonsful on hot, well-greased skillet. Brown on both sides. Serve with applesauce.
