ROMA'S CASSEROLE 
2 c. celery, cut diagonally
2 c. chopped onion
2 c. chopped green pepper

Saute above in 1/4 cup oil (may need more). 1 tsp. salt 3/4 tsp. pepper 4 oz. can mushrooms or 1/4 lb. fresh 2 c. diced cubed chicken or turkey 2 cans chicken broth 1 can cream of chicken soup 1 can cream of mushroom soup 1 c. raw rice (Minute Rice) 2 tbsp. soy sauce 1 tsp. salt

Mix all ingredients. Bake in 13x9 inch pan covered with foil at 350 degrees for 1 1/2 hours. Uncover, bake 30 minutes longer.
